Usually the fresh hazelnuts are dried until the water content is reduced by 10%, then stored in a cool dry place. When choosing hazelnuts in shell, make sure that there are no holes – this is a sign of poor quality nuts. It is best to buy hazelnuts under vacuum in opaque containers, jars or cans.
Hazelnuts must be stored in a cool, dry place. If the nuts are exposed to light and heat, they form the Aspergillus fungus, which contributes to the separation of aflatoxins. These toxins cause liver cancer and suppress the immune system. Hazelnuts in shell can be stored for several months in a cool and dry storage without direct sunlight.
